Honey from the Fields of Waldoch Farm
Farmer Doug has been beekeeping at Waldoch Farm since he was 14 years old. He learned the ways of a Minnesotan beekeeper from Grandpa Dan, who received sage advice from Grandpa Dan’s brother, George, who was a professional beekeeper in Florida and kept bees for over 90 years!
We keep between 26 and 35 beehives on the farm to serve as pollinators of all our produce, strawberry, and apple crops. The honey bee is the only pollinator that produces an over-abundance of honey, more than they need for the winter. We graciously benefit from their sweet work.
At Waldoch Farm we extract honey twice a season.

Honey: Harvest Schedule
At Waldoch Farm we extract honey twice a season.
Once in late July called Clover Field and once in late August called Sweet Harvest.
Clover Field
The July extraction is timed just before the goldenrod bloom, so that it has more of a clover taste.
The goal is to have this honey available at the Grandpa's Roadstand by the Garden Tour each year.
Sweet Harvest
The August extraction has more flavors from the produce on the farm –we’ve had some people say that they can taste hints of peppers or squash.
The goal is to have this honey available in time for Fall Fun season.
Dandy Spring
When we have enough honey produced before the Clover Blooms we can mark the capped honey frames and spin them out separately from Clover Field to get Dandy Spring during the first extraction. This process allows us to capture the unique flavors of Waldoch Farm.
